I don’t think I realized quite what I was getting into when I started cooking competitively in 2001.  It had been a learning experience then, and even today, I pick up the occasional tidbit of information along the way.  I am by no means an expert.  There is always more room for learning, and I get humbled every now and again (like the time I want to York, PA and didn’t even make the top 10.)  I had some good teachers after my first attempt at cooking, but I would really have liked to have had an idea of some of the things I just didn’t know at the time.

I hope this document does that for you.  Just some of the basics I wish I had when I had first started.

UPDATE:

Aside from adding a couple of additional pages, the site design and structure is complete.  We welcome your feedback and recommendations, and look forward to improving the site in the future days and weeks to come.

Over the coming months, we will be adding the following new features (in no particular order):

• A page dedicated to the Empire State Pod chili cookoff (details to be determined soon)
• A new TerlinguaBlog section for some New York qualifiers headed to Texas this November
• A new contact page, with the ability to post questions or comments direct from the site
• A photo gallery, of past events and activities associated with cooking competition chili in New York
• Updated information on the 2010 GNYSCC (Great New York State Chili Championship)
• Sponsor information, particularly for the 2011 GNYSCC
• Additions to the calendar, including some competition cooking classes
